Bran Mayer is a prominent name in the field of butchery teaching, Bryan has been lecturing and conducting workshops with the James Beard Foundation, Stone Barns Center for Agriculture, Glynwood, The American Lamb Board, and the Culinary Institute of America. Co-founder of Philadelphia’s first multi-purpose butcher shop, restaurant and education space, Bryan has been working tirelessly to train a new generation of butchers. A firm believer in the power of knowledge, Bryan co-developed Fleisher’s renowned butchery training program. Bryan is a member of Team USA in the World Butcher Challenge.
The Butcher’s Guild is a fraternity of meat professionals. We believe a better meat industry starts with a spirit of inclusion. The Butcher’s Guild stands in the guild tradition of maintaining a moral code within a trade. Butchers in the United States have lost their cohesion and support network as the food system has become dangerously centralized. The centralization killed the demand for skilled artisans. We see the future of food based in localized food communities that require the knowledge of the butcher and we are fostering this generation of craftsman. We recognize food as part of a greater system that affects our health, environment and economy.
